It should come as no surprise that we have, in fact, discovered the food that fulfills all three criteria: healthy, cheap, and tasty. I made it up after eating a “grinning chicken sandwich” that I bought at Safeway.
This recipe is for you. I’m sorry there are no measurements, but you’ll thank me when you’re older. (It used to drive me crazy when my mom wouldn’t give me any measurements when I was trying to reproduce things like her potato salad. But it turns out that it’s not only more fun to make stuff up, but it also helped me learn to trust myself in the kitchen and to better gauge the effect of the ingredients I’m throwing about. It’s for your own good.)
1. Mash up a package of silken tofu with a few cups of croutons.*
2. Mix in a tiny bit of mayonnaise (like a tablespoon, maybe) and a tiny bit of mustard.*
3. Mix in a whole lot of curry powder. And then maybe some sage and some chili powder. And maybe some onion powder or garlic powder or something that tastes like chickens, if you want (I didn’t).*
4. Add a grated carrot.
5. And some thawed frozen peas (don’t worry about cooking).
6. Stuff inside some pita bread.
7. Stuff inside your mouth.*
See: simple! Well, unless you’re Stephan and this violates your strict policy of only preparing dishes whose recipes include no more than three steps.
